Tsjeeses, our Christmas Triple of 10% alcohol, is brewed only once a year, and this year it was in early February.
After the first open fermentation has passed, the young beer is moved to a 2nd vessel together with different types of stone fruits like mirabelles, grapes and peaches. Second fermentation takes place for about three to four months. The beer is moved again this time to a bright tank, where decantation and further maturation takes place for another 2 months. Bottle conditionning takes place at the end of August and by early October, we have a fresh Christmasmas Ale.
